Yes, because this website wasn’t schizophrenic enough already, I’ve decided to add the recipes for a coupla family favourites.
We’ll entitle this "Mrs. Crossley’s Barroom Favourites" (that’s BAR ROOM – it’s not a sound effect, smartass). To whit:
 
Mrs. Crossley’s Barroom Nachos
INGREDIENTS
Big bag of nacho chips (the round ones are better)
Can of STAGG chili (we prefer Stagg Classic)
Big handful of shredded cheese (we like old cheddar, but you can use Jack or whatever else strikes your fancy)
Pepper rings
about 2 tbsp’s sour cream
DIRECTIONS
– Dump some chips straight from the bag onto a big dinner plate or small platter. Make the pile sensible enough that they’re not all sliding off the plate, and don’t pack them too tight.You need space for the other ingredients.
– Pour about 1/2 of the can of chili over top.
– Microwave on high for about a minute.
– Pull the plate out and sprinkle on the shredded cheese.
– Back into the microwave for about another 45 seconds, or until the cheese melts.
– Add the pepper rings and sour cream.
– You’re done!
That’s the basic recipe. You can tart it up into an "upside-down taco salad" by adding grated lettuce, chopped celery, chopped tomato or any other fresh vegetable that your little heart desires right at the end (or even before you put the cheese on, if you don’t mind chancing soggy veg). However, you should still be able to manage the basic recipe above even during the second half of your New Year’s party, without taking the lampshade off your head.
This, BTW, is the way they do nachos at your favourite watering hole. What, you thought some bonehead actually stood there browning ground beef every time you ordered a plate of nachos?
